This coating of oil serves as a natural preservative, and also keeps the lentils free from weevils or other insects. Every Indian household uses this lentil almost daily in the form of dal, sambar, khichdi and other dishes. You can use it as mild or more spiced versions. Its flavour can be enhanced by giving it a tempering of hing, jeera curry leaves and ghee.
