Black Eyed Beans or cowpeas are extremely nutritious, fiber-rich legumes. They have a cream-color and a black "eye" which is easy to spot. They have a mild flavour and soft texture when cooked which allows them to absorb spices nicely. To cook them faster, they are generally soaked for a few hours in water. Nothing special but nothing wrong either. Similar to what I can get locally, to be honest. Might try a different brand next time.
