The sliced and dried form is easy to use, adding heat and yellow colour to your dishes. Its bitter flavour and earthy aroma goes well with sour flavours such as tamarind and lemon juice. It is a popular spice in South Indian cuisine, it is used in herbal infusions, broths, spice blends and traditional recipes. It is high in curcumin, antioxidants, and anti-inflammatory properties.
