Edible Gum Pieces or Gond comes from acacia trees, and is traditionally used in Indian cooking and confectionery. It is used fried as it expands when fried, giving light, crisp texture to sweets. Edible Gum Pieces or Gond is used in mixtures made with dried fruits and roasted flours as an immunity booster after childbirth and in winter. Beyond texture, they contribute mild binding properties in these health-improving recipes. Indian sweet mixtures are incomplete with gond, used by lightly frying then adding to laddoos, halwa, or panjiri.
