It is used in French and Mediterranean cooking, with everything from chicken and fish to potatoes, mushrooms, or other butter and cream-based preparations. Tarragon adds a herby note and as it is concentrated, it's best to experiment with a small amount and then adjust to taste. This herb stays easily for a year, if stored under airtight conditions.
