Widely used in Indian and Middle Eastern cooking, it can balance out the tastes of chutneys, curries, and marinades. It is usually added to salty and bitter dishes to neutralise their overpowering tastes. It adds a natural sourness similar to tamarind or lemon. This powder is also valued for its antioxidant properties.
