Whole Kashmiri chillies are used for the fiery red colour that gives many gravies its lovely appetising cold. Mildly in heat, these chillies can give just a mild spice kick and make the dish visually appealing. Many cooks use them in tempering along with cumin and mustard. Some recipes call for these to be soaked in water to release colour and flavour. Spice Mart uses only the best chillies which retain their natural qualities and freshness through their shelf-life.
